~ The Vinification: Whole bunch vinification in cement tanks. No dried yeast added nor sulfur dioxide. The maceration with grid lasts 11 days in order to ensure a total maceration of the grape in the juice.The press happens in a century wood vertical press for a slower pressing and a better respect of the grape and juice.The end of the fermentation and the conservation happen in cement tank (covered in resin epoxy)The filtration and the bottling process are made by springThe trade starts 1 year after the harvest
