~ The Vinification:  Our wine making process doesn't involve de-stemming but hand harvest is made. The maceration is made over 7 to 8 days in cement tanks before press. The end of the maceration and the matration are made in oak tuns Filtration happens in spring The wine trade starts 1 year after harvest
